Organic acid, clear crystal with a molecular crystal water, odorless, strong sour, soluble in water, alcohol and diethyl ether. 

Its calcium salt is more soluble in cold water than in hot, which is used to distinguish and separate the citric acid. 

The anhydrous citric acid can be gained if controlling the crystal temperature better. 

Its aqueous solution is acidity. 

It will be slightly efflorescence in dry air and hygroscopy in wet. 

This can resolve into water and carbon dioxide at 175℃
